Ingredients

  • 1 cup water
  • 1 cup sugar
  • 2 Tbsp Earl Grey tea leaves (or 2 tea bags)

Instructions

  • Add 1 cup water, 1 cup sugar, and 2 Tablespoons Earl Grey tea leaves to a small saucepan or pot and give it a quick stir to combine.
  • Bring the syrup to a boil over high heat, then simmer over low heat for 3 minutes. Turn off the heat and cover the saucepan and allow it to steep for 20 minutes.
  • Strain the syrup using a fine mesh strainer, pressing the tea leaves with a spatula or spoon to extract as much of the earl grey flavor as possible.
  • Pour the jasmine syrup into a sterilized jar, bottle, or container with a lid and refrigerate until needed.

Notes

  • If you don’t want to use loose-leaf tea, you can use two teabags instead.
  • To make a thicker syrup, add twice as much sugar or cook longer to reduce.
  • When stored in the refrigerator, this syrup should last up to 2 months, although you can freeze for longer storage.
  • You can pour this simple syrup into an ice tray and make Earl Grey ice cubes!
  • If you notice that the syrup at the bottom of the jar starts looking cloudy, this is a good indication that the syrup has started to go bad and should be discarded.
